Hmax & H10 missing from processed results

The estimates of H 1/10 and Hmax are estimates of wave height that are based on what is called "zero crossing." In short this analysis can only be performed on the time series of the free surface position; other time series such as pressure lose too much short wave information due to attenuation.
This means that we can only perform this type of analysis on our AST time series. So this is why you see Hmax and H10 from AWAC-AST data but not PUV data (Aquadopp, Aquadopp Profiler, Vector).
There are many within the community that use the estimate of significant wave height (based on the energy density spectra of pressure or velocity) and extrapolate this to arrive at estimates of Hmax and H10. Earlier versions of WaveExtract did this as you noted. You should however be aware that this is just an extrapolation and Not a direct measure of any kind.
Here is the generally accepted relationship:
H10 = 1.27*Hm0
Hmax = 1.67*Hm0
where Hm0 is the significant wave height based on the energy density spectra.
